What is the FDA Model Food Code?

Answer:

The 1999 FDA Model Food Code recommends a two-stage cooling process.

Stage 1:

Cool foods from 135°F to 70°F (57°C to 21°C) within two hours.

Stage 2:

Cool foods from70°F to 41°F (21°C to 5°C) or lower within the next four hours.

If food is not cooled to 70°F (21°C) within two hours,it must be reheated to 165°F (74°C) for 15 seconds before packing resumes.
